This is really a soda bread. Soda breads are great when you have no bread in the
house and you need some quickly. They do not need to be kneaded and they need
no time for proving. It is simply a case of mixing all the ingredients and baking.
Ingredients:
- 20g butter
- 225g plain flour
- 225g rye flour ideally but any other flour will do
- 1 tsp bicarbonate of soda
- 2 tbsp black treacle
- 50g porridge oats
- 450mls milk
- 1 tsp sea salt
- A little honey
Method:
- Heat the oven to 180C fan. Grease a baking tray.
- Mix all dry ingredients except the porridge oats together well. Add all wet ingredients except the honey and thoroughly mix. You want to have a sticky dough.
- Form a round ball, cut a deep cross in the dough and sprinkle the oats. Bake for about 35 to 40 minutes. To test if it has baked, tap the bottom, it should sound hollow. Cool on wire rack. Brush with honey to make a glaze whilst still warm.
- Allow to cool before slicing, or breaking up into delicious chunks which is what I like to do. Serve with plenty of fresh butter.
