Jackfruit Jalfrezi

‘Jalfrezi’ means ‘hot fry’, so this is the Indian version of a Chinese ‘stir fry’. It is cooked quickly in a hot pan with a little oil.

Jackfruit is a tropical tree and belongs to the same plant family as figs and mulberries. It is enormous! How the branches of the tree do not break is a mystery. It is in fact the largest tree borne fruit in the world.

Jackfruit is a great substitute for meat and reputed benefits include benefitting heart-health, helping to fight inflammation and promoting wound healing in much the same way as the pawpaw.

We have combined jackfruit with herbs, spices sweet potato and spinach to create a  delicious curry. The vegetables are robust, the spices are warming and packed with flavour.

It is a drier curry, so you may like a dollop of natural yogurt or raita and some naan bread served with it.

For best results cook from frozen.

  1. Preheat your oven to 180ºC, 350ºF gas mark 4.
  2. Remove this sleeve and plastic wrapping but keep in the wooden tray and place on a baking tray. Cover tightly with foil. Our wooden trays are suitable for the oven, just make sure they are not too close to a direct flame or element.
  3. Place onto the middle shelf of your oven for 40 minutes or until piping hot.
  4. Leave for a couple of minutes before removing foil, beware that steam will be released so take care.
